Baked Oatmeal Donuts
HAPPY NATIONAL DONUT DAY!! (Friday, June 3, 2016)
I’m sure by now you have all seen posts from Dunkin Donuts (free donut w/ a beverage purchase!!) and maybe some other donut places around you (Peace Love and Little Donuts here will give you a free one if you’re wearing tie dye!), so YOU BETTER BET I’M CELEBRATING IT!!
Plus going to Dunkin later today on the way to the gym 😉 Will update on that later!
Baked Oatmeal “Donuts”
I was making baked oatmeal for breakfast and figured I would just turn them into donuts for National Donut Day! Maybe it’s all in my head- or just the glaze- but these taste even more amazing than baked oatmeal!
INGREDIENTS:
3/4 cup oatmeal
2 tablespoons honey
1 mashed banana
1/4 cup cottage cheese (blended until smooth!)
1 egg
GLAZE:
2 tablespoons all natural peanut butter
1/2 scoop chocolate protein powder
3-4 tablespoons coconut milk (The consistency should be a little frothier than frosting! It is glaze after all!)
DIRECTIONS:
Mix all the ingredients (put the cottage cheese in a blender or food processor to make it smooth). I don’t have a donut pan so I just shaped the dough in a donut shape. I also made jelly-filled and chocolate-filled donuts by just plopping the filling on some dough and then putting dough on top. Bake at 350 degrees for 15 minutes or until golden. Dip one side of donuts in the glaze and let sit for 5-10 minutes until the glaze hardens. Enjoy!
UPDATE: Went to Dunkin. Got an Almond Joy iced coffee (no cream or sugar was needed! It was super sweet without it!) + a free strawberry donut with sprinkles!
Ate it on the way to the gym. Finished the coffee with my workout. Felt a little nauseous doing box jumps- guess the donut didn’t finish digesting! But no regrets because yum.
